Ethiopia has several growing regions, but we typically look for coffees from Ethiopia that have a pronounced berry note. Dozens of coffees are sampled each year and then we select a single coffee that we know people will rave about. A medium roast is applied to highlight the berry notes that these coffees are known for.
To brew into a 1-Gallon airpot, use 200 grams on a medium to coarse grind. If the brewed coffee tastes overly watery, weak or thin, make your grind a little finer. A 5lb Bag should yield roughly 11 1-Gallon airpots. If you are brewing smaller batches, the general rule of thumb is: The less coffee being used, the finer the grind can be, so brewing a 2.2 liter airpot would require a finer grind than brewing a 3.8 Liter (1 Gallon) airpot.
